Selva d'oro

From the vineyards of Casale in San Gimignano, the Selva d’Oro is a light white wine, perfectly dry, with a slight aroma of fresh fruit, not barrel-fermented and made from Vernaccia and Chardonnay grapes. Preferably drunk young and fresh, it is excellent with appetisers, pasta and white meat, or on its own as an aperitif. In 1996, the Selva d’Oro received the IGT Tuscany appellation.

Denomination: Bianco Toscano IGT

Origin: vineyards of San Gimignano.

Grape variety: 60% Vernaccia and 40% Chardonnay.

Vinification: Soft pressing and fermentation off the lees; cold temperature control of the fermenting must and the wine when ready for tartaric stabilisation and ageing in stainless steel tanks.

Alcohol content: 11% minimum

Ageing: It should almost always be drunk young, although this wine can age well in the bottle for 2-3 years after the vintage

Description: Pale yellow colour, with a slightly spicy aroma and a hint of green apple. The flavour is intense, fruity, dry, clean and mellow.

Serving temperature: 8-10°C

Serving suggestions: appetisers, vegetables, pasta and main courses based on fried, grilled or boiled fish and shellfish. Excellent as an aperitif.
