AROMA OF MARASCA CHERRIES, SPICES AND CHOCOLATE

Careful selection of the grapes and wise use of the barrel, while respecting the characteristics of the Tuscan Sangiovese produces an elegant wine of great balance and structure, that is soft and velvety, with a balanced taste. It is produced by the Paretaio vineyard in San Gimignano, with Sangiovese grapes (95%) and other red grapes (5% Merlot) selected by hand at the time of harvest. After about 12 months in oak barrels of 225 l, it is placed in bottles and aged for a further 12 months before being put on sale. The Paretaio has a deep ruby ​​red colour, tending towards garnet with ageing; it has a distinct aroma of ripe marasca cherry, spice and chocolate; it is dry, austere, spicy and balanced on the palate. It goes well with red meat dishes and grilled game, soft cheeses and moderately / very mature, non-spicy cheeses

Origin: Vigna del Paretaio, properties in San Gimignano (SI)


Grapes: Sangiovese 95% and Merlot 5%


Vinification: Traditional with frequent pumping, around one year in small French oak barrels, followed by ageing in the bottle for 12 months.


Alcohol content: 13% minimum


Ageing: This wine ages well in the glass even for 5-10 years.


Organoleptic characteristics: Deep ruby ​​red, tending towards garnet. Distinct aroma of ripe morello cherry and prune. Dry, austere, spicy and harmonious

flavours. Serving temperature: 18° C - we recommend decanting before serving.
