Crushing and fermentationof the grapes
During the harvest, immediately after the pressing, the Vernaccia di San Gimignano grape pomace is placed to rest in special hermetically sealed containers. This guarantees the best conditions for alcoholic fermentation at the distillery, preserving unaltered the characteristics of the wine.

From distillation to the finished product
Vernaccia di San Gimignano grape pomace harvested at the press is subjected to a distillation process, which takes place very slowly, discontinuously, inside traditional copper stills.
The product obtained is then left to age for a few months in stainless steel containers.
