Produced since 1987 from the estate’s historic Paretaio vineyard in San Gimignano, this Tuscan red is crafted from carefully hand-selected Sangiovese and Merlot grapes. Meticulous vineyard selection and thoughtful use of oak preserve the distinctive character of the Tuscan Sangiovese while adding depth, complexity and a supple texture..
After the fermentation, which is carried out in temperature controlled stainless steel tanks, the wine matures for many months in 225-liter French oak barriques, allowing the fruit, tannins and oak to develop in balance. It then spends another ageing period of several months in bottle at the winery, gaining harmony and greater aromatic complexity before release.
The result is an elegant, harmonious and well-structured wine, with a soft, velvety texture and a distinctive expression of Sangiovese shaped by the unique terroir of San Gimignano.
How to enjoy theRosso Toscano IGT Paretaio
Produced from the Paretaio vineyard in San Gimignano, this Tuscan Red IGT is a structured and age-worthy expression of Tuscan Sangiovese.
With the potential to develop gracefully for 8–10 years in bottle, it rewards cellaring while remaining approachable with appropriate decanting.
Deep ruby red with developing garnet hues with age, this wine offers an expressive bouquet of ripe dark cherry and dried plums, complemented by subtle spicy notes.
On the palate, it is dry, firm and well-structured, with balanced tannins, a savory character and a harmonious, persistent finish.
Extended aging in French oak and then in the glass bottle contributes depth and integration without overwhelming the varietal character.
Best served at around 18°C and decanted before serving, the Paretaio is a natural partner for grilled and roasted red meats, game and traditional Tuscan cuisine.
Its structure also pairs particularly well with medium-aged and long-aged cheeses.

- Denomination: Tuscan Red IGT
- Provenance: the Paretaio vineyard at Casale, in San Gimignano
- Grape variety: hand picked Sangiovese and a small percentage of Merlot grapes
- Vinification: traditional fermentation in temperature controlled steel tanks with frequent pump-over till completion, with passage in small French oak barrels for about a year and a half, after which the wine is refined in the bottle in the winery0s cellars
- Alcohol content: 13% minimum
